Ingredients:

  • 2-4lbs of thinly sliced beef, venison, or other lean meat
  • Redmond fine salt (code: RIBEYERACH)
  • Seasoning or marinade to taste

Instructions:

  1. Put your thinly sliced beef strips onto your dehydrator rack trays
  2. Salt them with redmond fine salt (we use the fine for jerky, as we feel it adheres better). Feel free to add any other seasonings or marinades you’d like here. But the taste of just the meat and salt is great!
  3. Set your dehydrator to 165 degrees and dehydrate the beef for 3-5 hours. You can start tasting your jerky at around 2 hours and wait until its done how you like. Some will prefer a softer jerky (cooked for less time), while others will prefer it to be very dry. If you decide to marinate your beef jerky, the added moisture of the marinade will add a few hours to the dehydrating time.

Notes:

  • If you have a local butcher, ask them for beef “stir fry” or “jerky sized” strips, they’ll know what you’re talking about. Having them pre-sliced will save you so much time!
  • You can add any seasonings or marinades you’d like to this recipe. If you do marinate, we’d recommend using organic coconut aminos in the place of soy sauce. We really do love the flavor of just the meat and salt, though!
  • Taste test your jerky as its cooking to experiment and see how dry you like it! Personally I like it a bit softer than some people do. You can store the jerky in an airtight bag in at room temp or in the fridge. It should last for quite a while (you’ll know if its gone bad).
  • We find our heavy duty stainless dehydrator works much better than the round plastic one we used to use. If you make jerky often, its worth the investment.
