Ingredients:

  • Steak (preferably grass-fed, but not necessary)
  • Redmond garlic pepper (code: RIBEYERACH)
  • Beef tallow or ghee

Tools:

  • Oven or smoker
  • Cast iron pan
  • Meat thermometer (we like the Meater+)

Instructions:

  1. Bring your steak(s) to room temperature, then pat dry and season on all sides.
  2. Preheat oven or smoker to 225 degrees
  3. Put meat thermometer into the thickest part of the steak (we like to use the Meater+). Set the ending temperature for about 15-20 degrees below what you’d like your final temperature of the steak to be (as you’ll still be searing your steak afterwards). For example, I set mine to 110 for a rare steak.
  4. Once your steak hits your desired temp, take it out of the oven or smoker
  5. Heat up a cast iron pan on high with some tallow or ghee. Once the pan gets hot, sear both sides of your steaks for about one minute on each side, until a golden crust forms.
  6. Let your steaks rest for about 10 minutes before serving.

Notes:

  • The reverse sear steak method is a great way to ensure perfectly cooked steaks! It’s so easy, and our steaks always come out perfectly.
  • We’ve used this method with beef, bison, and ostrich steaks and it always works well. It can also be used with almost any cut of steak, but works best if the steak is at least 3/4 inch thick.
  • The cook time will vary greatly depending on the thickness of the stick, that’s why we love using a meat thermometer that has a setting where you’ll get a notification when it reaches your desired internal temp. We love our Meater thermometer, as its wireless (use this link for a discount). Of course, the Meater is used with WiFi, so its not low EMF. Given the fact that its not much additional EMF exposure than the typical amount we’re around, we’re not concerned about it.
  • We love the redmond garlic pepper seasoning for our steaks. Another great option is the Noble Made steak seasoning. You can use any sort of spices/seasoning you’d like (just make sure to check the ingredients).
  • If you want to marinate your steaks before cooking, you absolutely can! We actually prefer not to, as we love the simplicity of just minimally seasoning our steaks (we feel marinades can distract from the flavor of the beef).
  • Add some roasted bone marrow to really level up your steak!
