Cast Iron Pan Meatballs Recipe (Low Carb, Keto, Animal-Based)
Ingredients:
For the meatballs:
- 1lb ground beef
- .25-.5lb of chopped bacon (uncooked)
- one whole egg
- 1/2 cup of parmesan cheese
- 1/3 cup of crushed pork rinds
- 1/2 onion (finely minced)
- 3-4 cloves of garlic
- redmond salt to taste (code: RIBEYERACH)
Optional toppings:
- Organic marina or white sauce to taste
- 1/2 cup mozzarella
Instructions:
- Mix up all your meatball ingredients (I like to do this with my kitchenaid using the flat beater, but by hand will work too)
- Heat up your cast iron pan and add in some beef tallow and sear the edges of the meatballs for about 2-3 mins each side on med-high heat (until they’re golden on the edges).
- Take your cast iron off the burner and cover with marinara sauce (or white sauce) and mozzarella cheese.
- Transfer to the oven and bake at 350 degrees fahrenheit for 10 mins, then enjoy!
Notes:
- If you’re doing a strict carnivore diet, feel free to leave out all ingredients except the meat, eggs, cheese, and salt. & If you don’t do pork, you can omit the bacon and pork rinds. The meatballs still will taste amazing!
- Many people simmer their meatballs, which is also delicious, but I developed this recipe because I prefer the meatballs to be more of a medium rare. Trust me, you will love these meatballs!
- This recipe can be used with pasture-raised meats or conventional meat. Eat the best quality you can afford! We get our grass-fed beef from White Oak Pastures and love them! - This recipe is a great with organ meat ground blends. It’s such a great way to get in the organ meat nutrients with a very palatable taste. Those can be found at Force of Nature Meats and Northstar Bison (code: RIBEYERACH), or you could make your own ground organ blends.
- The pork rinds can be replaced with flour if you tolerate it well. It can also be omitted. The meatballs just won’t get quite as crispy of a crust on the edges.
- My husband likes to make homemade rolls with organic flour to make meatball subs. I’m still gluten free, but it’s an option if you tolerate gluten well.
