Bone Marrow, Meat, & Eggs Breakfast Scramble
Ingredients:
- Pasture-raised eggs
- Ground meat (any kind will work)
- Marrow bone (beef, bison, elk, ostrich, etc)
- Animal fat for cooking (tallow, ghee, butter, etc)
- Redmond salt or seasoning
- code: RIBEYERACH
Instructions:
- Roast bone marrow (here’s a recipe) separately
- Heat up your pan with your burner on medium, and coat it with some cooking fat (tallow, ghee, etc)
- Add your ground meat and stir often until cooked through (or you can leave it more rare). Add salt and seasoning to taste.
- Whisk your eggs together (for every 1/2 pound of meat, add 2-3 eggs), then turn down your burner to low and pour over the ground meat. If your meat is really lean, you may need to add some more fat. Stir often, distributing the eggs well throughout the meat. Take off the heat when eggs are cooked and fluffy.
- Scoop your bone marrow out and mix it in with your egg & meat scramble. It’s delicious!
Notes:
- Northstar Bison, White Oak Pastures, and Apsey Farms all have great grass-fed beef and bison bone marrow (use the code “RIBEYERACH” for a discount at any of their farm stores). If you’re looking to try some unique marrow, you can even try ostrich marrow from American Ostrich Farms (code: RACH).
- If you are sensitive to egg whites, try this recipe with just the yolks. It will taste great, too!
- I love the redmond garlic pepper seasoning for this recipe. Another great option is the Noble Made steak seasoning. You can use any sort of spices/seasoning you’d like (just make sure to check the ingredients).
- Bone marrow is excellent for skin and joint health, and is a very healing food. You are going to love it! It’s my favorite way to eat eggs.
- This recipe can be enjoyed by anyone, and it fits in great with these diets: the carnivore diet, keto diet, lion diet, paleo diet, animal-based diet, low carb diet, Weston A. Price diet, etc.
