*Northstar Bison meats are un-aged (unless otherwise noted) and delivered frozen, which makes them a great option for those on a low-histamine diet (or those with mast cell reactions). For a while, I needed my meats to be low histamine, but now I actually much prefer the taste of un-aged meats!
