Slow Cooked Beef Tongue Recipe (Dutch Oven)

Ingredients:

  • 2-3 lbs of beef tongue
    • This recipe also works for other types of tongue (bison, elk, pork, etc)
    • White Oak Pastures & Northstar Bison both carry beef tongue (code: RIBEYERACH)
  • 2 small organic onions (quarted)
  • 4 gloves of garlic (peeled and chopped)
  • 1 bay leaf
  • 1 tablespoon of apple cider vinegar
  • 3 cups of filtered water or beef stock
  • Redmond salt to taste (or himalayan sea salt)

Tools:

  • Dutch oven (we love this one)
  • You can use a crockpot for this, but they can leach toxins into food. Dutch ovens also retain heat better.
  • Instant Pot / Pressure Cooker Instructions: follow this recipe exactly, but cook for only 2 hours

Instructions:

  1. Rinse your tongue with water
  2. Add the tongue into dutch oven, along with the rest of your ingredients
  3. Simmer on low for 6-7 hours
  4. Remove from heat and let the tongue cool, then peel it (or wear gloves and do it right away)
  5. Chop up the tongue (it should be very tender and easy to chop—i like to slice it first, then chop into bite sized pieces)
  6. Heat up your cast iron pan on low-medium with butter, then add some minced onion and cook until translucent. Add some minced garlic and cook until fragrant. Then add your beef tongue to the pan and cook for several minutes, stirring occasionally.
  7. Remove from heat & enjoy!

Notes:

  • Beef tongue does NOT have a strong taste like other organs. It tastes delicious! My husband (who won’t eat organs) said it tasted better than regular beef tacos.
  • Beef tongue makes for excellent tacos. In fact, if you’ve eaten a lot of Mexican food, chances are you’ve already had tongue!
  • If you’re doing a strict carnivore diet, feel free to leave out all ingredients except the beef, salt, and water. I did this for over a year and it tastes amazing!
  • Feel free to add in any other herbs or spices you’d like (peppercorns, celery, carrots, etc)
  • This recipe can be used with grass-fed beef or conventional beef. Eat the best quality you can afford! You may be able to find tongue at your local farmers market or butcher shop.
