Homemade Mayonnaise Recipe (Seed Oil Free)

  1. Bring your egg yolks to room temperature in a large mason jar—don’t skip this step!
  2. Melt bacon fat to liquid (let it cool until about room temperature)
  3. Add apple cider vinegar, mustard (optional), and salt to the egg yolks. Mix with immersion blender. If you’re strict carnivore you can leave the ACV out of the recipe, but it does help with the emulsion process.
  4. VERY, very slowly pour in liquid bacon fat into the mixture (while continuing to run your immersion blender). You should take about 2-3 minutes to pour all the bacon fat into the jar. The mixture will start to thicken and turn a lighter color. If you mix it too long, it will turn back to liquid—try to avoid this, but if it happens there is still a way to save it.
  5. Store in the fridge & enjoy for up to one month!
Notes:
  • If over-mixed: bring another egg yolk to room temp, then slowly add in the mixture to the yolk while continuing to use the immersion blender.
  • Using a tall, large mason jar for this recipe will help prevent splatter when using your immersion blender. If you don’t have one, a glass bowl will work fine—just know that it will likely splatter!
  • You can also substitute the bacon fat/lard with olive oil or avocado oil, but we prefer the lard!
  • You can substitute lemon juice for the apple cider vinegar if you’d like. It will also do a great job of keeping the emulsion.
  • If you’re doing a strict carnivore diet, you can omit both the apple cider vinegar and the mustard. It will still turn out great! But I do recommend keeping the ACV if you tolerate it, as it helps with the texture/consistency of the mayonnaise.
  • This recipe can be enjoyed by anyone, and it fits in great with these diets: the carnivore diet, keto diet, lion diet, paleo diet, animal-based diet, low carb diet, Weston A. Price diet, etc.
