Paleo Dark Chocolate Recipe (Raw Honey Sweetened) Paleo Dark Chocolate Recipe (Raw Honey Sweetened)

Ingredients:

  • 1/2 cup of organic coconut oil
  • 1/3 cup of organic cacao powder
  • 1-3 tablespoons of raw honey (to taste, we typically do 2 tbsp)
  • 1/2 teaspoon of organic vanilla extract
  • A dash of redmond salt (use code “ribeyerach” for 15% off)

Instructions:

  1. Start melting the coconut oil with a double broiler. If you don’t have a double broiler, no worries. Just add some water into a pot, then put a glass bowl on top and put the coconut oil in that (make sure the water in the pot isn’t touching the glass bowl).
  2. While the oil is melting, combine the cacao powder, raw honey, organic vanilla extract, and salt in a large glass measuring bowl.
  3. Once the oil has melted, use some oven mitts to pour the oil in with the rest of the ingredients. Make sure to take the oil off right when it finishes melting, as you don’t want it to get too hot. The melting point of coconut oil is around 80 degrees, so the raw properties of the honey will remain intact as long as its around 100 degrees or less.
  4. Mix thoroughly with a hand mixer or whisk Make sure the honey is well integrated.
  5. Pour the chocolate into silicon molds. We use these ones (amazon has lots of fun options).
  6. (optional) Add cacao nibs into your silicon molds before pouring the chocolate in. This gives the chocolate a nice crunch! I really like doing this in combination with adding a few drops of peppermint extract.
  7. Let the chocolate cool in the fridge for a few hours, then enjoy! Store in the fridge to ensure the chocolate doesn’t melt.

Notes:

  • The reason the chocolate needs to be stored in the fridge is because the coconut oil may get melty at room temp.
  • You can replace coconut oil with cocoa butter and it will turn out great! If you do this, the chocolate can be stored at room temperature. We just prefer the taste of the coconut oil, and its actually cheaper, too.
  • The reason we use cacao powder versus cocoa powder is because its less processed. You can use cocoa powder in this recipe instead if you’d prefer!
  • Adjust the amount of raw honey in the recipe to your taste. The less honey, the darker and more bitter the chocolate will be. We usually add about 2 tablespoons of honey.
  • The salt is optional. There’s no need to include it. If you like salt in your chocolate, feel free to add more!
